Easy Sausage, Broccoli & Pasta

Sausage, Broccoli & Pasta
Submitted by Andrea Stunz

Ok, so this is a creation of mine and I have no good name for it. If anyone has something better let me know. Usually when I’m asked, “What’s for dinner?”, I will usually say, “that pasta, sausage and broccoli stuff”. 🙂 They always say “YES!!!” It’s THAT good. And the whole process takes less than 30 minutes and you have a complete and healthy meal – if you used turkey sausage. 🙂

*1 bag of penne pasta (I like to use the Gluten Free Brown Rice Pasta but any kind is fine.)
*About 3 cups of washed and cut fresh broccoli (more or less depending on what you like)
*1 package of Italian Sausage about 5 short, fat links (Johnsonville from QB Foods. Cold Storage has an Italian Sausage that I’ve used as well. In the U.S. I would use Italian Turkey Sausage and it made it all that much healthier. But I haven’t found that in Singapore.)

Boil the pasta per directions. (Once the pasta is finished, add a little bit of Extra Virgin Olive Oil and Garlic Salt)

While pasta is boiling, peel the lining off of the sausage and saute’ in a separate pan that has a lid. (Or you can simply cut the sausage links into slices if you don’t want to bother peeling and all that.) Stir the sausage to enable it to break up into pieces resembling minced/ground beef. When sausage is completely cooked, add the small pieces of broccoli to the sausage and put a lid over the pan. Turn off the heat. Sausage will steam and soak in some of the yummy flavor from the sausage.

Add the sausage and brocolli to the drained and EVOO’d pasta and mix it up. Sprinkle a little bit of your favorite cheese on top and maybe some cayenne pepper if you like.

Eat and enjoy!
